Fresh Yeast (Cake)

~70% water. Sold as a soft block. Perishable — refrigerate and use within 2 weeks. Crumble directly into dough or dissolve in lukewarm water first.

Active Dry Yeast

Granulated, partially dehydrated. Proof in warm water (38–43 °C) with a pinch of sugar for 5–10 min until foamy before adding to dough.

Instant (Rapid-Rise) Yeast

Most concentrated. Fine granules can be mixed directly into dry ingredients — no proofing needed. Acts faster and is forgiving of temperature variation.

Conversion ratios: Fresh : Active Dry : Instant = 3 : 1.5 : 1 (by weight). Teaspoon equivalents assume standard density values (instant ~3 g/tsp, active dry ~3.1 g/tsp, fresh ~8 g/tsp).
