Summary

Enter your target brine volume, salt percentage, and optional vinegar and sugar amounts to get exact ingredient weights for perfect pickling.

How it works

  1. Enter the total volume of brine you want to make (in milliliters, liters, or US cups).
  2. Set your target salt percentage — typical ranges are 2–3% for quick pickles, 3–5% for lacto-fermentation, and 5–8% for long-term preservation.
  3. Optionally enter what fraction of the liquid should be vinegar (e.g., 50% means equal parts water and vinegar).
  4. Optionally set a sugar-to-salt ratio (e.g., 50% means half as much sugar as salt).
  5. The calculator computes liquid volume, then derives salt = liquid_grams × salt% / 100 and sugar from the ratio.
  6. Results appear in grams, ounces, and common kitchen measurements (teaspoons/tablespoons/cups).

Use cases

  • Quick-pickling cucumbers, carrots, onions, or jalapeños for same-day eating.
  • Making lacto-fermented sauerkraut, kimchi brine, or dill pickles.
  • Scaling a pickling recipe up or down for different jar sizes.
  • Calculating bread-and-butter pickle brine with vinegar and sugar.
  • Preserving cherry peppers, green beans, or beets in a shelf-stable brine.
  • Experimenting with different salt percentages for flavor and texture.
  • Converting a recipe that lists percentages into exact gram weights.
